Dude, it appears that you where in the store testing the cam out. Well as you and all should know... what happens to gear on the shelf, everyone before you has pushed buttons, settings changed etc, etc.
Did you have all the settings the same as in image stabilization, FPS, lighting, bla bla bla,,, looks like not... image stabe on the one was terrible... I would think the best test would be to set it on a tri pod, zoom to the same spot, let people pass by, pan,zoom, close and far, then judge.
Canon's picture is more clear, brighter more transparent and cristal. The bright spot from a silver exgaust tube of the motorcycle or a car windsheild has "X"shape bright star, which makes the picture looks more shining.
I just bot a Panasonic but I think Canon's video quality is better.
From the HD video of youtube, you can find out that almost all TM300's sky color is graygreen instead of bright blue(I think panasonic's auto white balance has problem, I tried manual white balance but cannot fix the color of the sky to dark or bright blue). and all looks like not under a clear daylight even some of them are. that means panasonic's contrast is not good enough.
Both cameras are great. You won't regret with either choice. Canon video resolution is slightly but not much better. On a scale: 100 Canon to 97 Pana. Pana has more neutral tone while Canon has a warmth tone. It was a tough choice but I finally chose Pana TM300. Reasons below:
1. Pana has more features - 5.1. surround sound and a fun timelapse. Timelapse - no need to buy an expensive DSLR for this feature now.
2. Pana has better OIS. I am after all a consumer not a professional. So I won't be carrying tripod all around.
3. In Singapore, Pana TM300 cost S$600 less than HFs10. Not sure why but probably the brand is not as famous. But who cares about brand, it's video that I want. With the savings, I got a wide angle lens n others still have money left.
Two other things I like: Viewfinder - this helps to stabilize cam when I don't have tripod. And big Manual Ring n all the manual functions when I want to experiment and don't want Auto.
I have not used Hfs10 but seen its video online. It is a great cam too. Again, whichever cam, you will not regret. Have fun. I have posted some TM300 vids on my Youtube site if you want to see.

How about a Panasonic TM-300. You can do time lapses and it has HD and AVCHD. I have one and I really like that.

I like you are in the market for a good cam, concidering between a Canon Vixia HF-S11, Panasonic HDC-TM300, JVC GZ-HM400, and Sony HDR-XR520V.
I record music shows stock car races, so low light a must for fast cars under lights, good zoom, and spot light modes a must.

watch the two examples and then skip back to the tm300 shot- face color is off
puts me off the tm300 i wanted
skies also seem to be a problem in other vids

and when shooting people, the canon has more red color, which make you looks like healthy while Panasonic has more green.

I like the cannon because when you zoom all the things around it goes a little bit bury and gives it a cool effect.
But Panonsonic has better quality

Dont know if you've bought any yet.. well here is my opinion anyway
I think the panasonic got a better light level in my opinion, and maybe a bit faster auto focus
The canon got a better zoom (in my opinion), wish the light level was a bit higher, but can probably be adjusted in some settings.
They are both great cameras and I'm sure you will be satisfied with whichever you pick.
Heard some good things about Fuji F200 Exr as well (if its at this level of cameras you're looking at)

I've never owed any Canon camcorders, but I do own many other Canon products (including a pocket IXUS100 camera, and a soon to be 450d DSLR)
After my good experiences, and the video you have posted, I am inclined to stick with my Canon bias ;)

The Panasonic has better quality far off while the canon has better picture up close. It depends whether you're going to be doing vlogs or scenery.
