  • From Texas, good mexican food is hard to find where I live now up north, so I make a lot of my own. This recipe looks wonderful, I am trying it tonight.

  • Just made it. I must, nice tutorial. :) The one thing, I wasn't sure how much olive oil to use but it came out nice. And I took off a little too early so there's leftover broth that gives it an unwanted greasy feel, but that's just my mistake. XD Gracias, la senorita simpatica. (Did I say that correctly?)

  • @xxtaurusladyxx I don't know what pot you are using but I find that the reason rice comes out mushy is because it has too much liquid. Maybe you can reduce the liquid by 1/8th of a cup and see how it goes. If you find you need a little more simply add it after you test it. Does this make sense? I hope you have a great day!

  • @1020Shane Some times your burner is not low enough and the liquid steams away too fast. In that case the rice will be a little hard. I have had stoves that are hard to regulate so I needed to keep a close eye on the rice and, yes, add a little more liquid. Sorry this was not perfect for you. Have a wonderful week!

  • @thbklover2010 Chicken broth is like a chicken soup with only the concentrated liquid. No veggies or chicken. You can definitely only use water for this. The chicken stock gives it some flavor but you will be fine with the tomato. Thanks so much for coming by!

  • Easier mexican rice from my ex who was from Oaxaca - any vegetables in the fridge, rice, goya type chicken seasoning, a shake of garlic, a pat of butter, a splash of milk, must have big chunks of onions so they withstand the nuke, measure the rice 1 - 2 parts water so it's not mush and the veggies will drop some moisture - stir, microwave 12 minutes - stir once during the 12 minutes and only with a fork! - perfecto They lived 15 people in a house, now that is frugal.
