When the yeast didn't proof so well, I would have gone out and bought fresher yeast. BUT. . . . if looks like the bread sticks came out very well regardless.
Question: Do ya need yeast at all in the mix then or would ya end up with a long rock?
@ricklude I believe rapid rise and quick rise yeasts do not require proofing. You can throw it in with the flour, sugar, warm water(110deg), garlic salt. I use active dry yeast that I proof before making doughs and it gets good and foamy. Leave out the salt, of course when proofing. Also curious if the stick were crunchy or semi-soft?
Now all you need is a nice fresh salad and maybe a big bowl of soup.
I've never really baked anything with the exception of Jiffy cornbread and one or two box cakes but this looked easy enough I might be able to try. Thanks again Rick.
mixing the yeast with warm water is for activation. Yeast is a living bacteria. when its in the jar or packet ( like you had) its kinda in a suspended animation where its not doing anything. the water brings them out of that. so they can rise the bread.

Nice, yea the yeast won't proof if the water is too hot or too cold. It should be around 100 degrees Fahrenheit.
