@darkgardyner wonderful, let me know how you like it. Also the written recipe is on my site and please post a pic of your dish on my face book if you get a chance :)
@dedemed Made it for supper last nite and it was seriously delicious! I didn't think to take a picture of it, but I'll be making it again for sure, so I'll do that next time. I did leave out the cheese and the bread crumbs b/c I'm doing the Harcombe Diet, and the flavor was still so amazing! Perhaps not as pretty as yours, but still. I'll be adding this to my weekly rotation...And I'll be sure to post a pic on your FB page. Thanks!!!
I love your site! this is interesting in that it doesn't have bechamel sauce on top, thus saving lots of fat! and the hassle of making it - although it it super yummy. I usually put some spice like cinnamon or allspice in it too. and of course - garlic!
@SkaffBear exactly, a lot of Mediterranean food is very similar, just slight differences...that's why it's called Dede's Mediterranean kitchen :) don't forget to check out my site
I just happened to come across this video. Thought I'd give it a try since I had the ingredients on hand. I was floored because this came out so delicious that it knocked me over! It reminds me of a Mexican dish my mom used to make called "calabasitas". I didn't have fresh parsely so I subsituted with fresh spinach and used dried parsely flakes. I cannot wait for my husband to try it! Great video too! I am looking foward to trying your other recipes!
Great Way to do Moussakaa. I'm used to the more traditional lebanese way which my mom makes; it's more of a stew and she puts potatoes in it too, thought i would share this way of doing it too.....anyways it's a great recipe and let me congratulate you DeeDee on this whole project (videos, website....)...we have such a great and healthy tastefull cuisine that a lot of people should know more about.......
I had a dish like this at a dinner party I think it is the same thing made by a palestinian lady - but it was made with meat and tomatos without the eggplant and chickpeas. Wondering if this is the same dish with a differnt twist?
Don't know about the Arabic, but I do know in Greek it is pronounced [mu sa KA], with the accent on the last syllable. I always thought that this was a Greek dish, have I been mistaken?
Actually the word moussaka is an Arabic word meaning "chilled". It is a true Mediterranean dish b/c all of the Mediterranean countries have their own version on this wonderful dish :)
Well, go get me! I love learning about language and especially love learning about food. Who'd have thought? I wonder where the "chilled" aspect comes into play, because I've only ever eaten it warm, hot, or room temp. Maybe it was originally served chilled? Hmm. Thanks so much for the clarification, You are a superstar!
oooo yum yum yum! Looks fab, and SO healthy! Totally gonna make this!

Hi Dede...love this vids! For us meatlovers...can you substitute the chick peas with a meat, say chicken?
johnmac1221 2 years ago
YOu can definitely add any meat you want in addition to the chick peas. Do no eliminate the chick peas, they are an integral part of the dish :)

deAnalyn118 2 years ago
yes, pretty much, except eggplant is an integral part of moussaka.
dedemed 2 years ago
do i have to add chickpeas? i'm actually allergic to them, and everything in the legumes family. is there something else i could substitute?
thenicerevolution 2 years ago
You can omit the chickpeas, and add hamburger or chicken or any other meat you might like. Again if you want you can also just leave the beans out.
Dede.

perfect timing! i'm trying to eat healthy, and i love eggplant. :)
