@francesinman Thanks! LOL , I'm just wondering about that ^^ . I can't wait to try this out! . Oh , for the icing .. what kind of icing can be used for this recipe? Buttercream? Whipped cream? fondant?
@MileyRoss go to my dessert blog tastiertreats.blogspot.com and look under the 'cake' label. There is a really great icing made with instant pudding and whipped topping. This seems to work best since it freezes nicely. Good luck!
Try using a cookie or ice cream scoop to drop softened ice cream on top of the cake layer for you don't have to spread it around as much and break the cake layer. :)
I just made my first ice cream cake from scratch and posted on my YouTube Channel. I found it easier to bake the whole cake mix in the springform pan and once cooled, then level the cake and cut it in half. Remove the top layer to add ice cream (I made my own homemade cake batter ice cream) and the add the top layer of cake back on. For an authentic Baskin Robbins, Cold Stone white icing, buy Pastry Pride from Smart and Final for the icing.
Respond to this video... seems like the ice cream would get freezer burnt from thawing and re-freezing it,seems to happen to me if i don't get my ice cream home from the store before it starts melting.
In terms of the video, the audio is pretty bad. You hear every little clank of the pans and every crinkle of the parchment paper to the point of wanting to mute it. Also, the camera angle isn't best. You kept walking in front of the camera.
I was hoping to see a perfect, professional ice cream cake, but this was so sloppy and disorganized, that is not what I saw. See bettyskitchen on how to present a recipe. I could not hear most of your instructions because of the pan and parchment paper noise.
If doing it in a 9x13 pan, you will need two cake mixes and probably 2 gallons of ice cream for it to work the best. So do a full mix in each pan with regular cooking times.
Or get 3 8 inch cake pans.........pour cake mix in 2 bake and while those are baking......get out ice cream of choice soften a little bit then pour in 3rd cake pan (use wax paper on bottom) freeze for 1 or 2 hours......when ice cream is ready pull out, put 1 cake layer on the bottom then the ice cream layer then the 2nd cake layer on top.... frost it.....freeze it for 30 minutes and BAM!!! Ice cream cake easy and good
@bee72740 It usually doesn't get dry because the water in the cake freezes instead of evaporating. If it would make you more comfortable, cover the cake. I typically don't cover the cake because I don't want to smash the cake or have it stick to the cake. If you are freezing it for more then a couple of days then you want to cover it to prevent freezer burn/taste.
It doesn't use whip cream, it uses cool whip. You can use regular frosting, but the frozen results aren't as good as when you make it yourself. This frosting really is my favorite part, I encourage you to try it.
@Lildrummer02 cool whip is non dairy whipped topping, freezing milk products (whipped cream) has a bad result, Stay with the non dairy whipped toppings- dream whip works too
I made this and it is wonderful.... yummy, yummy, yummy.
I made it with yellow cake mix, strawberry icecream, strawberry topping on the icecream and vanilla pudding with regular cool whip. You can't loose with this awesome recipe. I saved 30 dollars!

Can I use chocolate sponge cake for the base ? I'm kinda worried it'd ruin my base if i used sponge cake after I put the ice cream ..
MileyRoss 9 months ago
@MileyRoss I would be hesitant to try sponge cake because it will absorb any melted ice cream and you might end up with a weird base. just a thought
