@Jakathera Brats is typically used with veal but pork is a good replacement for veal brats. Served with a nice side of hot german mustard and rye/ a hard roll :)
Another question: How much of a difference does the type of beer make when simmering the sausages? For example, a good beer versus oh....bud light? I'm not a beer drinker so can you recommend a decent brand? thanks again
@NobbyKNobbs. It isn´t that important, actually just simmering them in beer wont give them a special flavor. In oder to achive this you must leave them over night marinating in the beer (in the fridge). then take them out and bring the beer to a simmer, cook them and... voila! you got an amazing "biergeschmack" sausages

I find that fresh sausage tastes better a couple days latter or after you freeze for a while. The flavors meld.
I don't think it is fair to just say something is a pantry item: it cost money to buy, it costs money to replace.

Homemade sausage is always good. My dad and his buddies made a sampler batch last month that was insanely good. Play around with the curing: dry cured Hungarian sausage tastes way different from smoked Hungarian sausage.
