Yes we only use 'kyou' in the mangs books and various other magazines and such but we never use them in the visuals. But is is 'ok' to use 'kyou' if you want it just bugs me that you americans just....well never mind but you are somewhat right good job and i like the video!!
Oh no they are only the main couple pairings. lol I felt sorry for Kagura because so many people thought she'd go with kyo. well that sadly isn't the case. he goes with tohru so i put her in.

Sometimes in the manga it's spelled 'Kyou', but it's can also be spelled 'Kyo'.
