@agentbb007 More specifically, they do it so the mechanic standing behind the car putting the starter motor in through the back of the diffuser (F1 cars are not self-starting) doesn't get exhaust gasses in his face which can exceed 800 celsius.
@agentbb007 it's to channel the exhaust away from the uncovered parts of the car, because with no body panel on there is no heat shielding where there usually is which can damage parts.
