It does seem farfetched but I agree with where you're coming from. Like paranoia makes you think everyone is looking at/talking about you. You're just telling your brain that, so eventually it believes that as reality.
that is because you do not really believe you are a dragon. you will just be doing it to prove the theory wrong. you don't just have to believe you are a dragon but know you are a dragon and your entire reality will actually change.
i think what they mean is that without humans, there would be no "stars" or "planets" because those are just words from one human language. we have created the reality known to us by use of symbols and perceptions. if there were no humans, how would atoms and electrons exist? no one would be there to witness them with microscopes. that's my take anyway.
