I'm no photography expert, but I think it's just how the camera is calibrated, i.e. using a short exposure to capture Saturn in detail. If they'd used a longer exposure then you would see the stars, but Saturn would appear "washed out" as it's considerably brighter.
is earth the little star-like sparkle in the ring, or is it more of a shadow? I'd like to know! I'm a space-nitwit, but i'm very moved by the pictures, that it's almost surreal, as Porco explained: it almost looks like a videogame-image, instead of the real thing!
We live in a very interesting time. Robotic probes are returning images of our solar system as well as doing hard science. But this shot of Saturn is absolutely amazing, all the rings are blazing, and then there's the tiny dot of Terra.

Notice the background is almost jet black with only one pin dot earth visible? This image makes me wonder.

But in case you are not joking, here's my answer.
There's only a few hundred billions of stars in our galaxy, NOT trillions.
Galaxies and nebulae would be too small to see.
If the camera is tuned to see stars, Saturn will be over exposed.
