You said 11 cups of white sugar and 1 pound of barley malt?  Doesn't the beer have a cider like taste?

I'm not a big drinker, but I find my self making alcohol at home, like in your rum videos, but you're not going to distill the beer? I would recommend it for any homemade brewery project since yeast also lets off methanol, a slightly toxic and all around nasty tasting.

@dragomitch if i distilled the beer, i would lose the natural carbonation........then after distilling, i would have to force recarbonation.......

Yumm. I remember when we made some dandelion wine. It blew up! The recipe I followed said to cap it...not a good idea. It shattered the glass bottle we had it in, good thing no one was hurt. ; )

im glad noone got hurt......thats why i allways use a condom and not those air traps things.....if they get stopped up, they could blow up.....condoms give.....
