You used only peasants cause they are the only units which would run away. Anything else would have shredded the cannon crews. Arty is VERY inaccurate in this game so I much prefer catapults and mangonels to warm up the enemy.

Is there any way to afoid being cast out by the pope when attacking catholic factions?

carry artillery e.g. catapults and cannons into a siege and assault all their cities at the same time in the same turn,medieval blitzkrieg

the pope or that faction won't have a chance to react before that faction is wiped out

or just be a muslim or orthodox faction

Usually if you can keep up your faith (or the faith he has in you) up, you won't be excommunicated; just partially punished with the faith points. Building churches and such helps with this.

Use Elephant Artillery- they get 15 cannons per unit as opposed to two per unit for most artillery.
