actually, you should use 100% teff , that is what is injera, what they make in usa or abroad is half bread. because to bring teff to usa is expensive...in the furure try 100% and if you dont know teff is nutrious and reduce chance of become dibetes compare to eating whaet
I live in Columbus, OH and there are atleast 10-12 stores just on my side of town that have Teff. I keep on hearing that it's expensive but I go to to the Patel Brothers by us and can get a 4lb bag for $7.99. It's made by Swad, a huge international Indian foods distributor in Toronto. Is it not possible to find this online even cheaper? Maybe we're just spoiled here in Columbus. But if it's that accessible here in the midwest, I don't understand why everybody says it's so hard to find/expensive.
@rizdraver No market locally for teff, no finding it. Simply put. Have to have a community that demands it, hence, the suppliers. My advice is to those who can't find it is to go online for it. Indian bajri by Sawad is a little different millet seed. The sorghum or jawar is fine for making the whiter injera. In my experience, the Indian bajri doesn't ferment the same and lends a very dark grey color to the teff, even if you mix it. It is cheaper, tho.
@hwiseman1 Whole Foods or any organic food store sells teff flour. It's $6.99 a package but you can mix it with barley and wheat flour to make injera.
@annettemint I usually get min when I'm out of town...but not too much luck here in Pgh. Sometimes, they are out or seel the Bob's which isn't the same as the red teff. I once got some at a dollar store (????) in Michigan...no lie lol! It was the real red good teff.

We used 1 cup of teff and 4 cups of white flour. You can play with the proportions if you want, but you'll have to adjust everything in the recipe.
