  • @nazmiyezuhal maida is all purpose flour, he used whole wheat flour mixed with a 1/3 of the former...

    atta is general flour used is in india but atta is not grind as mush as the maida(not moida) the all purpose flour we get in supermarkets is closest to maida . while for atta you have to find it out. and gluten content depends on wheat. while maida loses some of it as while grind it losses it as it becomes hot.

  • the secret is in the dough...so water-wheat flour-flour proportion must be accurate....he should have clarified on that...wonderful chef..passionate and such lovely human being...

  • Hey Chef, what kind of material should the inside of the bowl be made of? My guess is if I flip my nonstick pan upside down, exposing the nonstick surface to the flame will destroy the surface.

  • Mayda is all-purpose flour. You can buy it at any Indian store or use the kind for baking breads, etc.

    no its not a pizza. its just a PLAIN bread. pizza usually has sauces, toppings, flavorings etc. This bread is eaten with spicy vegetable and/or spicy meat dishes for flavor :].

    Maida is white flour made from wheat, also known as all-purpose flour.

  • Hi Chef, anothr variation take 2 small rounds and spead out a little with your hands, apply oil to one side of the "peda" or rounds and join them together oiled sides together. then spread like a rolling pin like a single rotiand on an ordinary tava bake it. The rotis will start comming apart when they get baked. seperate fold and serve...Its easy and tastes very good...only its not as big as a roomali roti...
