  • The horizontal cuts are not necessary. it just fundamentalist chefs beliefs. The onions layer are already horizontal. Sure you will get a finer cut if you slash a few extra horizontal, But since the onion already have its own the finer diced pieces will not make a significant difference. It never a good idea to cut towards your finger if you don't need to.

    I have always sliced it off and done my dicing, slicing or chopping. No big deal especially if you're only using one.

    Minus: Cut off much less of the root. Just slide the knife over the skin to take off just that part of the root that sticks out. The root holds the onion together while slicing. Horizontal cuts are only necessary in the bottom 1/3, above that the layers curve into natural horizontal cuts. It's safer since you still have the upper 2/3's to grip. The onion gets wobbly when you try to make horizontal cuts all the way to the top.

  • No rookie... you leave the root on while slicing. See the little piece of onion left unsliced...that he's sliding off the board with his left hand. That's should be the root-end. He's wasting perfectly good onion, and in any professional kitchen, there is not tolerance for that kind of waste.

  • Leave the root end on, that way when you do your vertical and horizontal slices, it wont fall apart, and you won't waste that piece at the end.
