You should try searing the Oxtails on top of the stove with fresh onions, not the yellow but the white onion, fresh green bell peppers and fresh garlic cloves using black pepper, kosher salt, curry seasoning and creole seasoning. for about 10 minutes then empty in to a glass dish or cast iron and bake for about 1 1/2 to 2 hours. When the meat is just about done add 1/4th cup of white flour and stir into the meat, meat will look gooey after doing so, place back in the oven until gravy is done

That is actually a good idea. I usually put mine in a crockpot and let them cook all day or until they are falling off the bone. Then I take them out and put some barbque sauce on them. But I have also cooked them in a baking bag and the fat is usually crispy.

The best way to release the flavor from the meat is to braise them first before cooking! That is to put a drop of oil in a pan, brown the meat to relase the flavour and carmelization.. Then you add the water.. Boiling them only makes them soft but without flavour.. This doesn't infuse flavour..mama. Try that the next time.

I cooked my oxtails yesterday. Nohairnet was used. LOL I did add carrots, celery, potatoes, onion. It was delicious. Skimming off the fat wasn't as difficult as I thought. I used a large spoon and reseasoned. Thanks alot for your tutorial. Remind ppl not to add potatoes too soon or they turn to mush.
