Jean Christophe Novelli is far away from a cook or even a chief... this guy is almost a fucking food engineer !He can make you eat the most awfull thing you never wanted to eat as a child and make it tasting good !

by placing that hollandaise sauce in the blender, i believe that that emulsion sauce losses its integrity. just my opinion, though. but the salmon en croute looks divine. yum yum.

@gurubhai01 I agree. There is a lot of cross-linking (age accelerating and increased cancer risk) in that food. The chefs do great but there's a shocking amount of prejudice and derision toward healthier, tasty dishes, unfortunately. It takes more skill and creativity to make healthy, good tasting foods. They shouldn't scoff at that.
