Louis was distraught, depressed, tormented, bitter, etc. His traits aren't much to stand out for the viewing audience. Lestat is self-absorbed, lacks compassion, controlling, etc, overall evil. These are traits much easier for an audience to capture. Besides, Cruise could never do a better Pollo Loco than Pitt.
