Judging from how young Jim Henson's voice sounded, this sketch must have been really early on in Sesame Street's production; thus he doesn't know Cookie Monster by name yet, since in those days, it wasn't too often that Muppets from Sesame Street and The Muppet Show appeared together.
It seems that, in the beginning, Muppet monsters were scary enough to, on occasion, induce spooky music whenever disrupting Kermit's lectures. If they had kept that up beyond the first season and given kids further nightmares, the show probably wouldn't have lasted as long as it has.
