they remove the wheels to keep them from running against anything while grinding. (which would block your speed)

the use of just two wheels is because they have freestyle frames which make it easier to lock on royale tricks but the ones with four wheels are called flats i believe but they are better for balance on rails and more stable for big gaps. i would recommend freestyle frames or two wheels to a beginner
