yeah i like the old layout for that reason as well...i think they should always add more options in a update versus taking them away...crazy...but nice video

this isnt friends this is contacts friends were taken off completely but this is still the only way to add someone as a contact

Helpful! Though I suspect Youtube will eventually move over to the new layout, taking away the option to use the old one. What you really ought to do is click the "Send feedback" button and let Youtube know that you want the option to add as a friend to be accessible again. Enough voices will make it apparent that there is a flaw in the design, and they'll surely change it.
