the program to do this is called synthesia, and you can do it by one of the "colors" at a time, which makes it easier and funner to play.

A lot of people seem to think this is "how to play" but this is synth'd stuff. It's physically impossible to play these vids with 2 hands :) But you can learn a few parts then put them together on a synth.

He left all the instruments in is why it looks complicated. Those are the notes played by all instruments. That's what it would look like if you played the drums, flute, guitar, etc all on just a keyboard. That's why some notes overlap.
