Actually, Estark is really Estark. Remember, Estark was really weakened when he woke up in DQ4, but he got his true powers back when he reappeared in DQ5. Maybe he started out brown and since he's powerful again, he turned brown again. If that fiend was really Psaro, then he would know who he really is. Also, Psaro would have transformed throughout the battle. Estark is unable to transform because he never employed the Armlet of Tranmutation.

And also, the years between DQ4 and DQ5 are much more than a hundred years. You can tell because the continents and towns changed greatly and the heroes of DQ4 are only remembered for defeating Estark, so the legends are really ancient. Their names aren't even remembered.

Funny how they call him Esturk and still use Death Picarso's colored body here. Esturk's body is colored gray. Not a big deal; but it is still pretty obvious.
