In my opinion if the developers thought of the techinques from AC2 and Brotherhood, and put it in AC1. I'm pretty sure Altair would know those stuff too. And it's hard to do things with 4 fingers on your left hand, maybe xD. Plus Altair was trained to kill/fight/assassinate without fear and stuff since birth, Ezio was trained when he was like...16?18 i can't remember.
