Austin and San Antonio are definitely real Texas. My own ancestors were in Texas BEFORE Stephen F. Austin became an 'impresario'. I grew up in West Texas but my ancestors were there long before the oil boom. 'Real Texas' is hard to define. It's an ATTITUDE!
You are right in that Austin and San Antone are real Texas, but the majority of its inhabitants (in Austin, more than anywhere) are NOT real Texans, who just happen to find themselves on Texas soil, but would more at home in Berkeley, CA.
