Gordon is learning from the wrong people. He needs to go to the actual Tokyo and find a real sushi master who has sushi making in his blood or nerves.

That said, I've been to Tokyo four times and have found the best sushi to be from japan where it's served with real attention to detail!!

This is so true, in a western kitchen it is the pastry chef that no-one messes with, they are the gods of the kitchen. Affter years of working in an Asian kitchen (as an expat) it is th sushi chef that we all respect fully. I'm lucky enough to have worked with bloody good chefs though. I would give my right arm to work with Gordon or Oyama in a restaurant.
