I searched interent and got some more details:

(1)White hats: most Hui Muslim wear hats.

(2)Red hats: the descendants of some Uighurs Muslims who moved to inland China around 100-200 years ago. I think they are already considered as part of Hui Muslim.

(3)Blue hats: the descendants of some ancient Jewish traders who lived in China several hundred years ago. This is very interesting...

It seems Jews do not eat pork neither. So, many non-Muslim Chinees wrongly thought that those Chinee jews were Muslim as well. However, it is true that some Chinese jews (or more strictly, the descedants of Chinese jews) are Muslim, and they wear Blue hats.

They are usually called as "Blue-Hat Hui".
