The rabbit actually was a sign of fertility in pagan religions especially during spring which celebrated Imbalc, a pagan festival. When the Roman Catholic Church took over Europe, many did not want to give up their old traditions so the Church incorperated pagan traditions along with Christian traditions. That is why we have a bunny rabbit on the day Jesus was supposedly ressurected. It was just easier to convert people.
