Learning the parts is easy. Getting them to work how you want is the hard part. It would be a good idea to learn the code that arduino uses (can't remember it) and just build stuff like the first color organ. You don't really need to know how to solder, if you're experimenting just connect the components wire to wire.

 @MusikDroid The arduino IDE uses a form of C, the structures are really easy to learn, and provided you have good libraries backing you up, your projects are easy.

Nice work, I really liked this one. I think I would use red, green, and blue l.e.d.'s so you can create all colors with it when they blend on the wall. Also, even though the heatsinks are clip on and solderless it wouldn't hurt to add a bit of thermal paste.
