The connection-parts are indeed removed by hand. In the video, these connection part are somewhat large (height = 5 mm) For this type of wood (beech) it showed that connection parts of 2mm height give enough strength to keep the model in place during the milling process.
Smaller connections save a lot of time afterwards removing them ! :-)
Very interesting video! Is the wood that connects the part to the rest of the block (I'd call it "sprue" if it were a mold) removed by hand?
