funny enough my boyfriend is allergic to fresh garlic (and onions, shallots, leaks, anything from that family) but can eat garlic powder and onion powder. WHY? Being italian this makes cooking very difficult and we all know fresh is better than the powder stuff

Dehydration usually involvres heat wich changes some of the chemical properties, and it does make cooking a challenge.

not really, garlic borne botulism is usually found in garlic stored in oil. The acids in your pickled garlic kills the bacteria. I just let my garlic hang in the air, and it's perfectly safe.
