You're making the envelope changes on the filter envelope! According to your verbal description, you should be making the changes to the volume envelope.

The term "VCA" is used incorrectly. VCA is not another term for EG! It means "Voltage-Controlled Amplifier." Alas, neither the VCA not its EG are touched in this "lesson".
The instructor demonstrates by making changes to the filter envelope. The changes can not be heard clearly. (The slow attack example sounds brighter, and thus *more* percussive, in a way.) The audible keyboard thump is bad, too.
