Corby was amazing technically, adding his touches to time-honoured ways of preparing foie gras, and Chen, well, he reminded me of the younger Liang brother who made a winning quartet in overtime with an ingredient he had never used before. The real reason the Iron Chefs stand up there is because their cuisine is so versatile, and Chen just proved exactly how versatile his is.
Why oh why that most of the 4 judges there are not food critics, most of their profession doesn't have anything to do with food? Actors/actresses, photographers, sport stars, and etc, seriously?
Chen san is living proof that Chinese cuisine can be creative, progressive and taste good and still taste like Chinese food. Most Chinese chefs outside Japan are just stubbornly holding on to whatever they're taught, with hardly any creativity and artistry, labeling it as "tradition". As far as I'm concerned, they're technicians/production line cooks, not artists, which is what a chef should strive to be. I'm definitely making a visit to shisen hanten the next time I visit Tokyo.
When the overtime was announced, the challenger looked bewildered and worried. What a scrap this episode is. Hearing the reactions and comments of the panel was also part of the fun. Fantastic show.

And you have to give extra props to Chef Kenichi: Who knew he was a dead man not only for going up against Chef Corby - but having to prepare an ingredient that Corby was an expert with and that Chen rarely (if ever) used! What a job by both men: Chen's roast foie gras with peaches looks so good!!

actually foie gras was discovered by jews in ancient egypt when they noticed that migrating birds naturally became swollen when the gorged themselves before a migration. There are farms in spain which exploit this natural process without force feeding or cages and in fact wild geese and ducks flying over the farm have been known to stop and stay rather than continuing their natural migration patterns because of the conditions on the farm. I guess you didn't know that though
Anyway so what if a few Spanish farms don't force-feed the ducks? That would be a tiny fraction of one percent of foie gras production. The crud you eat is surely not from there. Chen is one tough out. He takes an ingredient very seldom used in his style of cooking and EARNS a tie with someone whos cooking style is practically made for this ingredient.
There are times when they don't show every dish, but it's because of time constraints. Back when there was a longer cooking period (plus only three judges), you'd see more of each dish...the one downside being a LOT more commentary from the judges.

Where do you get your bizarre ideas? When the tubes are put in the ducks, they go all the way down to the stomachs-- the food goes right into them. There is no swallowing involved. The ducks have no choice.
Many of them vomit afterwards. And they are fed so much their livers expand 10 times normal size and become diseased. Would they really swallow "gleefully" under those conditions?
And they don't "run" anywhere... they are imprisoned in individual cages.

actually foie gras was discovered by jews in ancient egypt when they noticed that migrating birds naturally became swollen when the gorged themselves before a migration. There are farms in spain which exploit this natural process without force feeding or cages and in fact wild geese and ducks flying over the farm have been known to stop and stay rather than continuing their natural migration patterns because of the conditions on the farm. There are times when they don't show every dish, but it's because of time constraints. Back when there was a longer cooking period (plus only three judges), you'd see more of each dish...the one downside being a LOT more commentary from the judges.

But I'll go along. Any 3rd world people anywhere are able to buy grains and vegetables cheaper than meat. Meat is more expensive to produce, so it costs more (unless it's subsidized by the gov't, like here in the US)
So it these people are so poor, they should stick to plant-based foods.
PS We westerners make it more expensive for them by feeding half our corn to our farm animals. If we didn't, they could all eat well.

You haven't thought your side through. You say we eat animals "because we can". We can also easily kill whales until they all become extinct, or wipe out all the gorillas. We could do LOTS of things, but we don't, because it would be wrong and unethical.
So, just because we CAN do something is no argument that makes it RIGHT to do it.
And it is not wrong for some animals to eat each other; carnivores have no choice. We do. We don't need meat at all; I haven't for 2 years and feel great!

Where do you get your bizarre ideas? When the tubes are put in the ducks, they go all the way down to the stomachs-- the food goes right into them. There is no swallowing involved. The ducks have no choice.
Many of them vomit afterwards. And they are fed so much their livers expand 10 times normal size and become diseased. Would they really swallow "gleefully" under those conditions?
And they don't "run" anywhere... they are imprisoned in individual cages.
