@jastownsendandson I thought this at first, but it doesn't work in context of "the mushrooms have completely masticated." Letting it sit doesn't cause it to be "crushed or kneaded" any further. More importantly, this vid is fantastic and I'll be making some this weekend!
@verdatum Yes, in context of the sentence macerated would be much better. It is difficult to get me to say the correct thing anyway... Kevin usually writes the script and then I look at the script and throw it over my shoulder and go on to say it they way I would say it. Sometimes the translation is a bit sloppy. ok I made this stuff today and it is AMAZING.... my wife used it tonight to flavor meatloaf and it too was amazing.... thank you very much...

This stuff should keep fine without refrigeration and the dried mushrooms are perfect if you need a long term storage version of this sauce.
