Question to anyone here or Dave. How long can you run a car/ truck with no air filter. (just like the one here)

At my catering job, we had a box van (kitchen van = VERY heavy) with no air filter and the cap was off the carb just like in this video. The engine overheated and seased while driving 90k on the highway. This was after a couple days of use. Worse thing is. They let it pass safety w/o the carb cover or air filter.!!!
