I have a couple of questions. What if I don't have one of those hand-blenders, how do I blend the ingredients, and do the breadcrumbs and cheese topping make a huge difference to it's taste?
This is my new favorite pasta dish. I've made it twice now and have a few tips: 1) a blender + more cream or milk works just fine if it's not creamy enough and 2) use panko crumbs - they're crispier, larger, and I kept burning normal bread crumbs and 3) dont start pasta till cauliflower starts becoming easy to break down (around 8min I found)
this looks very very good! I will make it.. we are vegetarian (mostly raw)..I will skip on the olive oil though bc I learned when you heat olive oil its very carcinogenic...but otherwise will make it to the tee!! now on a hunt to find some organic cream...hard to come by :)
For two hours this night, I have been perusing old videos simply because I do not need to get up tomorrow. I must say that I foodgasmed many times tonight.
I made this with your broccoli salad on the side, finished with your perfect apple pie. OMG. What a feast. I love your videos. I have referred your videos to my niece who is wanting to learn to cook. You are brilliant and entertaining.
@bRaja87 - I used a potato masher and mashed the cauliflower manually in the pot, works just as well, if a little slower. Doesn't matter if it is still slightly lumpy, it all gets mixed in with the cheese and pasta anyway. Yum!
Cooking is about being creative and there are no rules. It offers people ideas. Don't judge if you didn't even try it. And if you think you can do better than this guy, post your own video and we'll see, instead of wimping in Italy.
This has become my fav. pasta dish ever, I make it every week! The 1st time was a total failure, though. If u dont pour out some of the water in the caulflow. pan, the sauce ends up having the consistency of soup, not creamy at all. Also I use whole wheat breadcrumbs for the topping, and it tastes way better. That breadcrumb topping is genious btw, I use it for veggie pastas and hear no more complaints about the "awful taste of spinach". Oh, and more garlic! Minced both in the topping&sauce.
If you're crying in Italy, why are you watching this? Do Italians go to pasta videos just to criticize at how it's a "disgrace" to Italian cuisuine? Jeez.
the good news about this dish is...... there isnt any good news. the bloody cauliflower is not in the list of endangered plants unlike the tasty bananas. all smelly , horrible things are protected by the devil. making a sauce using cauliflower is a sin. WHY?
Great dish! Why not upload your cookery video for the Tropical Sun Cook Of The Year competition? The winner gets their recipes published in a cookbook and you can win an Apple iPad. There's a video about the competition at YouTube/TropicalSunFoods.
you seem to make up a lot of these recipes as you go with whatever you have in the frigde at that moment and its ALWAYS spectacular. do you ever fail?
Something REALY delicious is very thinly sliced, cold smoked reindeer meat (so you can kind of see through it) marinated in lingonberry sauce and served with cauliflower puree and a bit of the lingon berry sauce.
(Excuse the propable bad english as I am from Finland)
Very lean recipe? No fat? Excuse me Chef John have you seen all the cheese and cream that you're putting in? Yeah... I wouldn't eat that if I was on a diet
I made this a few days ago. It was delicious. I ended up making another batch the following day. I have used the *alfredo* sauce on baked potatoes and chicken. Your recipe makes cooking enjoyable and healthy foods tastier. Thanks Chef John!
I love this dish, and looked forward to preparing it for others. It turns out, though,, that people under 50 don't get Cauliflower Alfredo. Oh well....
Can someone here pls tell me if I can blend the stuff in a regular blender? And does it explode if it's hot? Do I need to let it cool before putting in the blender? I don't have a manual blender like that.

tried this tonight but i messed it up... too much water.. and no emersion blender so i had to throw it in my proccesser in sections which... didnt work great... BUT... those crispy crumbs saved everything.. the sauce didnt taste like much. but those crumbs.. they were carrying all the flavour! Also exchanged bread crumbs for cornflake crumbs which were really good! so... yeah good recipe.. but my sauce was way too thin.. my bad
