  • I have a couple of questions. What if I don't have one of those hand-blenders, how do I blend the ingredients, and do the breadcrumbs and cheese topping make a huge difference to it's taste?

  • If you add caramelized sweet onion and toasted pine nuts to cauliflower...this joins a very unique sweet flavor. It's how my Sicilian Mamma makes it!

  • This is my new favorite pasta dish. I've made it twice now and have a few tips: 1) a blender + more cream or milk works just fine if it's not creamy enough and 2) use panko crumbs - they're crispier, larger, and I kept burning normal bread crumbs and 3) dont start pasta till cauliflower starts becoming easy to break down (around 8min I found)

  • @bRaja87 - I used a potato masher and mashed the cauliflower manually in the pot, works just as well, if a little slower. Doesn't matter if it is still slightly lumpy, it all gets mixed in with the cheese and pasta anyway. Yum!

  • @bRaja87 Transfer to a regular blender or mash manually with a potato masher (it will be a little lumpier, but fine).

  • This has become my fav. pasta dish ever, I make it every week! The 1st time was a total failure, though. If u dont pour out some of the water in the caulflow. pan, the sauce ends up having the consistency of soup, not creamy at all. Also I use whole wheat breadcrumbs for the topping, and it tastes way better. That breadcrumb topping is genious btw, I use it for veggie pastas and hear no more complaints about the "awful taste of spinach". Oh, and more garlic! Minced both in the topping&sauce.

  • the good news about this dish is...... there isnt any good news. the bloody cauliflower is not in the list of endangered plants unlike the tasty bananas. all smelly , horrible things are protected by the devil. making a sauce using cauliflower is a sin. WHY?

  • Something REALY delicious is very thinly sliced,cold smoked reindeer meat (so you can kind of see through it) marinated in lingonberry sauce and served with cauliflower puree and a bit of the lingon berry sauce.

  • emersion blenders are your best friend. Believe me,it's great for creamy mashed potatoes.

  • I don't think you would have any problem using a regular blender I use one when I make lettuce soup use what you got cheers.

  • I made this today. The first bite was surprisingly bland. As I ate more and more, it became more and more delicious. Kind of subtle. The red peper flakes were important.

  • That's what we do. If you can taste the difference between immersion blending and blending blending then you are way more discriminating than I!

  • tried this tonight but i messed it up... too much water.. and no emersion blender so i had to throw it in my proccesser in sections which... didnt work great... BUT... those crispy crumbs saved everything.. the sauce didnt taste like much. but those crumbs.. they were carrying all the flavour! Also exchanged bread crumbs for cornflake crumbs which were really good! so... yeah good recipe.. but my sauce was way too thin.. my bad

  • If you replace the barilla pasta with dreamfields low carb pasta and leave out the breadcrumbs, this would be a wonderfully low carb recipe that won't add to your waistline.
