sashimi grade means a large efficient reliable network of traders and fishermen and experienced market buyers who buy the freshest and best fish consistently.
thats alot of sashimi for 12£ where i live (DK) i pay 12£ /100DKK for that piece of salmon.

beautifully done, my only issue with traditional sahimi is the use of the same cloth for everything, it cross contaminates.
I use paper towels, which doesnt look as slick but does the job

sashimi has to be thinner.
you're not supposed to use a sawing action to slice sashimi, it damages the cells.
