people think alton is a dick or a jerk or whatever because he has a very dry, sarcastic sense of humor, which i find delightful and hilarious, but it just goes right over some people's heads. i actually got to meet him about a week ago and i promise you, he really is a nice guy. if you don't like him, go watch something else...i mean, that's just an idea.

Alton turned into a real self-important prick after losing weight. He seems pissed about almost anything and lost a lot of his humor. He doesn't make jokes anymore but just insults. I really did like his shows before he lost all the weight when he was fun and personable, now he just seems like an asshole.

If you watch the whole video he mentiones brining it and then leaving it in the fridge uncovered for a couple days. Dry skin=crisp. Wet skin=not crisp. Basted=wet. :)

I brine my turkey and then I mix a small amount of butter and mayo, mix my herbs into it, then gently put it under the skin of the turkey breast and thighs. Using this method, I have not basted a turkey for many years now.

My turkey turns out perfect every single time.
