The name, I believe, refers to Anibal Troilo's wife, Zita. Troilo is the composer for whom "Suite Troileana" is named, and this piece is part of that suite. That's what Piazzolla had in mind from what I've read.

Ah yes, This piece was my first-ever heard AND played (I am an accordionist) piece of Piazzolla. And the Assad brothers and Yo-Yo Ma make such a fantastic ensemble! Encore!
