Looks great; I'm making it right now :-) As soon as I started, I realized I had a few questions. Too late for this time (oh well :-P) but I have a feeling I'll want to make this again soon. Here are my questions:
How long do you recommend marinating the beef and the kimchi?
I'm using tofu instead of beef; do you have any special recommendations for how to use tofu?

aha.. usually..I prepare meat and kimchi at the beginning of the cooking for this recipe.. so while you prepare other ingredients you marinate them.. about at least 30 minutes will be enough for meat..kimchi can be less than that.. yes.. you can use tofu instead of beef... mashed the tofu..and remove the liquid from it.. with salt or soy sauce .. give saltness in it. you can use normal oil too..but I like olive oil or health..hehe thanks !!
Depending on what kind of ingredients you use for dumplings you can make it for vegetarian..but this video recipe has meat in it. Okay, I will recommend you this way.. switch the meet to tofu. Hey Aeriskitchen, is there a reason for the difference in shape for boiling and frying? Would be make a difference if I just did it in one shape and then boil and fry them? Thanks!
Here is my answer for your question..hehe When you fry, you want your dumpling skin becomes crispy golden brown not black from burning..hehe but at the same time..the inside of the dumpling should be cooked,, especially the meat. So..if the shape is flat not round..it's good to fry.. for soup.. since you cook the dumping in the boiling water.. you don't want..the skin is tore in the boiling water.. if it's wrap round shape like the one in my video..it's better.
But I do think ..there is no rule. You can make any kind of dish either frying or soup with both shapes, flat and round. If you want to make only one shape or you only have one shape..then..My personal recommendation is.. flat shape can be better for both dishes. because the round shape one is more difficult to fry..but the flat shape can be okay for soup. I hope you can understand my English. ^^:; thanks for question !!
