Because my oven doesn't seal perfectly, it took more than 2 hours, but a better oven and perhaps a slightly higher temperature (350 degrees) would be faster. In the fridge for at least 4 hours (after cooling for a couple outside the oven).
Here's a question for you. Why don't you stir the sugar with a spoon while caramelizing it? Is it just to avoid having an extra sugary thing to clean up, or does it affect the final product?
