love this show. i like mr. bittman presents the recipe without any fanfare or me-chef-you-viewer attitude. his presentations are sometimes funny, that's what i love about it.
Adding salt to cut vegetables and leaving it for such a long time before eating it is not a good idea, you will loose most of the potassium and vitamin C.
@oddysseuss no no it is...its true. From highschool biology I know vitamin B and C are water soluble. As the moisture drains away, it makes sense that those nutrients are lost.
Cabbage is one of the most under-rated foods in the market and in the garden. Cabbge had more potassium than bananas, more calcium than milk, and as much vitamin C as oranges! This is a great recipe and is wonderful with burgers. I always a drizzle of honey at the end.

You can accomplish the same result by steaming the cabbage for a very short time
