  • Chef, you used self-rising flour and baking powder and salt? I thought self-rising flour already has those in it. I'm new to baking from scratch. Please help. Thanks!

    You’re right, self-raising flour does include some baking powder that helps to make things rise!

    I did add extra baking powder into the flour as this recipe does require extra to help them rise enough.

    Sometimes they can go out of shape if you fill them too much or use cupcake holder instead of muffin cases. Muffin cases are bigger.

    The amount of flour stays the same whether you use self raising flour or all-purpose flour.

    If you decide to use all-purpose flour instead you will need to add 1 extra teaspoon of baking powder. So instead of using 2 teaspoons of baking powder in the recipe you will need to use a total 3.

I did make the muffins and they were DELICIOUS! :) I made blueberries, chocolate and chocolate with bananas just like in the video, except one thing, I didn't have blueberries! I am currently at family in Israel and tried it out here and there are no blueberries to be found here, so I used blueberries jam instead. Everyone said they were great even though it was jam but they fell apart far too easy.

    I did see the yoekshire pudding videos already, thanks! I like your vids:)

  • @OriginalNakedChef I really felt I wasn't clear so I decided to post a second comment even though I wanted to avoid it! (I got to 0 characters left on the last one ^^) - The muffins were GREAT! it is only the ones with blueberries jam which fell apart and even they were great. It's just that the Jam was probably quite liquid and probably weakened it, but I don't think it was that bad either, could perhaps add a bit more flour to hold them together if I use jam next time too :) Thank you!

    I really enjoyed the blueberry version. You could try adding a little more flour if you wanted or fewer blueberries.

    Either way as you say they taste great :)

  • Wonderful technique. Looks like a tender curb and I want to try this. Is there a written recipe? I need to Americanize it to what I can get in a grocery store in Athens, Georgia, USA. Looking at all the videos and the products makes me know this is the one to bake. Any help is appreciated.

  • @bettya9 Hi there, these are the Ingredients used: Dry Mix: 250g Self raising flour 2 tsp’s Bicarbonate soda ½ tsp salt Cinnamon a sprinkle 125g Castor sugar 50g muscavado sugar (brown colour) Wet Mix: 2 eggs 125g butter melted 1 tsp vanilla extract 175 ml / 1/3rd of a pint full fat / whole milk Fillings: Banana Blueberries handful Chocolate I used dark 70%+ OriginalnakedChef :)

  • Alright mate, I baked muffins on Saturday. First try. I done blackberry and blueberry muffins. Like a plonker I wacked the whole two punnets in the Muffin mix. Well of course they all sunk to the bottom and they were really soggy at the bottom. LOL. I will be following your recipe next time. I got some dried cranberries I wanna use up and I will maybe add some choc chips. I heard that if you dust the berries with flour they have less chance of sinking. :-)

    It's really annoying when things go wrong. I does sound you over done it with the berries.

    Ref dusting off the berries in flour is a good tip and should help with the sinking berries.

    I must admit I did enjoy those muffins especially the blueberry ones and I was pleased with how they turned out.

    Hi PinkEarth88,

    I have done some sums.

    Based on the ingredients and quantaties I actually used, the cost per muffin is around 50p to 55p each. This includes all costs such as muffin cases, blueberries and chocolate, bananas etc.

    The actual muffin mix is quite cheep, the chocolate and blueberries is where most of the cost is.

    There can be savings made by using less expensive chocolate or using blueberries when they are in season or on offer.

    Correct!

    Self raising flour does include "baking powder". For muffins you do need a bit extra baking powder!

    By the way: If you only had plain flour I would suggest using double the amount of baking powder.

    The baking powder makes the muffins rise.
