Chef, you used self-rising flour and baking powder and salt? I thought self-rising flour already has those in it. I'm new to baking from scratch. Please help. Thanks!
Nearly 3am (yes I felt like making muffins at this hour) and my muffins are finally done :D oh so yummy... they are a little out of shape though.. lol
I made some of these muffins last night, just with banana in them as I had a bunch going to waste. Absolutely delicious! Best muffin recipe I've tried and good clear instructions.
The amount of flour stays the same whether you use self raising flour or all-purpose flour.
If you decide to use all-purpose flour instead you will need to add 1 extra teaspoon of baking powder. So instead of using 2 teaspoons of baking powder in the recipe you will need to use a total 3.
Oh wow, this is just what I was looking for, to please my sweet tooth :) Seems it's been uploaded during the summer, bet it's going to get it's ratings really up soon seeing how it's a holiday season now :)

Alright mate, I baked muffins on Saturday. First try. I done blackberry and blueberry muffins. Like a plonker I wacked the whole two punnets in the Muffin mix. Well of course they all sunk to the bottom and they were really soggy at the bottom. LOL. I will be following your recipe next time. I got some dried cranberries I wanna use up and I will maybe add some choc chips. I heard that if you dust the berries with flour they have less chance of sinking. :-)

You are quite right, I always try and display the pic that best represents my offerings.
I have noticed that some up loaders display a perfect photo that does not look like the food they are serving up! I guess a good pic brings in more views.

those turned out incredible. initially i thought you added too much filling based on the amount of batter, but the final product turned out amazing. have you made scones? i'd appreciate a recipe on that.
Based on the ingredients and quantaties I actually used, the cost per muffin is around 50p to 55p each. This includes all costs such as muffin cases, blueberries and chocolate, bananas etc.
The actual muffin mix is quite cheep, the chocolate and blueberries is where most of the cost is.
There can be savings made by using less expensive chocolate or using blueberries when they are in season or on offer.

You’re right, self-raising flour does include some baking powder that helps to make things rise!
I did add extra baking powder into the flour as this recipe does require extra to help them rise enough.

Well done on making them and I hope they tasted good.
Sometimes they can go out of shape if you fill them too much or use cupcake holder instead of muffin cases. Muffin cases are bigger.

I really enjoyed the blueberry version. You could try adding a little more flour if you wanted or fewer blueberries.
Either way as you say they taste great :)

It's really annoying when things go wrong. I does sound you over done it with the berries.
Ref dusting off the berries in flour is a good tip and should help with the sinking berries.

I must admit I did enjoy those muffins especially the blueberry ones and I was pleased with how they turned out.
I have made scones before, I actually made some last week and did a video of them. So a scones video will be with you in the next 10 days :)

Hi PinkEarth88,
I have done some sums.
Based on the ingredients and quantaties I actually used, the cost per muffin is around 50p to 55p each. This includes all costs such as muffin cases, blueberries and chocolate, bananas etc.
The actual muffin mix is quite cheep, the chocolate and blueberries is where most of the cost is.
There can be savings made by using less expensive chocolate or using blueberries when they are in season or on offer.

Correct!
Self raising flour does include "baking powder". For muffins you do need a bit extra baking powder!
By the way: If you only had plain flour I would suggest using double the amount of baking powder.
The baking powder makes the muffins rise.

Thank you so much for your recipes, they are so good. Pizza was awsome, I just made it few days ago and today I'm making this muffins. My blueberry bush is now just full of blueberries and I was wondering what to do with them, I couldn't remember anything usefull to use them. Now I know :)
