Just curious, where exactly can I find the canned chicken in the grocery store? Would it be where the canned tuna is? I don't cook or grocery shop often, so I wanted to have an idea before I go. The recipe seems delicious and easy enough for me to follow. Thank you.

As promised, went out to get what I needed to make this. It was just really good, the grapes brought a lot of flavor to it. Only substitution I made was the pecans. I used walnuts. (I like them better =D )

I make this using a bit of low-fat, unflavored yogurt with the mayo (50/50). You get a nice crunch with water chestnuts, diced granny smith apples, red grapes, and then a bit of sweet with dark raisins. They serve this delicious chicken salad at First Watch restaurants...great stuff!

And, on any of my recipes, you can make ingredients from scratch, if having them quick and easy is not an issue. You can just grill some chicken before your assemble the salad, and you will be satisfied with it.

I think you would get 6 to 8 croissants worth from one recipe (depending on the size of croissant and how much you spread on them). Just multiply the recipe by 2 or 3 or whatever factor you need to make the number of sandwiches desired. Good luck with your shower! This is a nice food choice for it.
i grill some chicken breasts, dice it into nice pieces, add celery, grapes, and gala apples and toasted pecans to make my chicken salad and serve it on toasted honey wheatberry bread with butter lettuce its yummy

Or, you can buy rotisserie chicken, and just pull the chicken from the bones. If you are starting with uncooked chicken breasts, just pan fry them in some oil or butter, until they are white when you cut into the middle. Then chunk them up and add them to the salad--this way is great! Thanks for asking!

What a great idea using the fat free mayo. Though i love regular mayo I been using fat free re-fried beans as a substitute, but I'll definitely get the fat free for this recipe.
What I have been doing for many years is to substitute fat-free and sugar-free, whenever it doesn't affect the outcome of the recipe. (Which doesn't mean that I can't have a super-sweet fatty dessert occasionally!) I think the overall lifestyle philosophy of eating a lot of fruits/vegetables and cutting out calories every chance I get works well for me and my family. We never feel deprived, but doing this consistently really does add up to saving a lot of calories and unhealthy fat!

For this sandwich, it is canned chicken. You can use any kind of cooked chicken. Thanks for your compliments! I have no idea how many recipes I "have." I keep making them up, also! Thanks for your question!

What a great idea using the fat free mayo. Though i love regular mayo I been using fat free re-fried beans as a substitute, but I'll definitely get the fat free for this recipe.

What I have been doing for many years is to substitute fat-free and sugar-free, whenever it doesn't affect the outcome of the recipe. (Which doesn't mean that I can't have a super-sweet fatty dessert occasionally!) I think the overall lifestyle philosophy of eating a lot of fruits/vegetables and cutting out calories every chance I get works well for me and my family. We never feel deprived, but doing this consistently really does add up to saving a lot of calories and unhealthy fat!

Looks like a wonderful salad Betty perfect for summer here in Tx. Never thought of using canned chicken or sealing my bread am learning a lot from you . Hope this fall you will do some soups. *hint hint*

I used canned chicken, because it's so convenient. In our supermarkets, you can buy rotisserie chicken in the deli section, and then remove it from the bones, and chunk it. Or, get a thick slice of chicken and cut it into cubes. Thanks for your comment!
