Nicely presented do you know the 21 face down. 3 columns of 7 and their card is the 14th and you use magicians choice to make them select their card

Select 2 columns. Until 1 is left with their card

Take three cards so 4 cards are left and you should know the rest

Set up

3 piles of 7 cut one that's their card on the bottom Put it on one of the remainder of the two piles and the rest of the cut pile on top

Then the last pile on top
