But the knife chef it is some "small" 9 1/2" so I think I'm going to buy an extra knife chef a little more wide and longer; and ofcourse the sharping stone, Not an expensive knife, I spent more than $100 in these articles., I work in a small cafe with some breakfast and lunch... thanks again and realy I like your videos are very professional.
I am a certified Chef, therefore I am correct, There can be only 1 finger in the pot, The rounded handle is more comfortable, The bolster is rounded, its smoother in use, A good cook always keeps a finger over this part of the knife, A larger camber angle of blade makes it easier to use and it will remain longer with sharpening, Messermeister make more knives in series, The other companies you mention make disposable cheap knives in strange foreign lands, Messermeister - only Solingen, Germany.
