the key here is assimilation. the Irish and Italians and Greeks eventually assimilated into Whiteness (a legal category that didn't include them before). They assimilated, and were privileged by their newfound Whiteness accordingly. Whereas the cops used to terrorize the Irish, now you had cops who were Irish.
