sugar doesn't extract water, it increases the concentration of solutes on one side of the partially permeable membrane(decreasing water concentration) thus water moves from an area of high conc. to an area of low conc (i.e. solution) through the partially permeable membrane (egg membrane) into the solution (corn syrup) through osmosis (special case of diffusion) following a concentration gradient.

You spelled Brief wrong... interesting experiment, shame that it was only at the end that you mentioned the context of human drinking. Now it seems to me that it would be REALLY interesting to get several eggs, put one in coke, one in gatorade, one in milk etc etc and measure them all before and after and compare changes with the relative suger or water contents of these drinks..
The starch molecules in the corn syrup are too large to pass through the holes in the egg's membrane.

if corn syrup has more solutes, then the solutes would diffuse into the egg and cause the egg to swell. idk why urs got smaller.

It would happen the same that happens when you drink to much and feel thirsty the next day... It will also dehidrate the egg.
By the way, hangover is not just dehidration, it's caused by excess acetaldehide that can't be processed due to lack of B1 vitamin
