personally, I hate gordon ramsay. I find his temper funny. But the only one of the chef I really respect is Heston Blumenthal. both cooked for Pierre Marco White, but Heston is a cook and by interim a scientist. And thats why I dont think Michelin Stars mean the same all around the world and doesnt seems to perfectly fit anyone. this receipe is very simple if you ask me.
@10cookman doesnt mean that because he did an intership in can roca!! hes the next ferran adria!! i know a lot of people that have been doing stages all over spain and still no results.. also a lot of people after doing stage get head chef jobs and dont have what it takes
@nikkkkkkkkkkkkkkk1 is not it ... only comment was that I worked with a Portuguese chef who already has around 20-year career that made the stage in a short time ..... Can Rocca although not sure if it was in the Arzak Can Rocca .... it is an excellent chef but not the next Adria, although I'm not a fan of Adria ....
@nikkkkkkkkkkkkkkk1 I can't help but laugh at this comment. Michelin inspectors are more concerned about taste and concept rather than the difficulty to prepare a dish.
@nikkkkkkkkkkkkkkk1 michelin stars in europe and US are both a joke it seems like every restaurant makes the same shit with the same technique like this all the time
Great video..this is one dish from the French Laundry Cookbook I've been meaning to do..wish it was a bit slower though..excellent knife skills btw..keep it up!
nice one, me and a friend did something similiar for my mother on her birthday. Salmon with fried polenta sticks (we cut them in fine rectangles and fried them) and my friend did some sort of butter sauce. Im not sure maybe beurre blanc?
Keep up the great work, I first saw your Coffee and Donuts video and since then im an eager viewer. Dont stop, too many good recipes and I own the book as well, and one thing is reading and another is seeing. Fantastic work
Pretty simple if you have the ingredients. No real technical mastery involved here. This is coming from a 2nd month culinary student.

Amazing how "presentation' can add a couple hundred bucks to a dish.

@5FnX17 i think the black truffle added the 200 bucks

if there is one thing that pisses me off about the culinary world, its the small fucking portions they make when preparing a dish.
