This is why they turn off/on. This is really normal. Flying along at several hundred miles per hour in a very dynamic atmosphere, it is not uncommon to fly through a temperature inversion or an area of lower moisture content, contrails can be sporatic, non-existant or continuous. Various power settings of the engines can lower or increase the temperature of the exhaust depending on if the aircraft is complying with a speed restriction from air traffic control, climbing or descending.

Yes, that is correct! a jet that is equipped with high-tech spraying apparatus and it is obviously switching tanks or got air bubbles during it's spraying operation! Read all about normal contrails(short for condensation trails) and you will find that they only last a couple of minutes in normal circumstances! The reason a contrail stops is because the aurcraft exhaust is not enough to saturate the air, thus keeping the sky clear.
